Lemon Cookie Balls

Summer is just around the corner (thank goodness…teaching adolescences this time of the year is exhausting)!  I am excited for my second post on the Wonderfully Made on a Stick series!  This recipe came from The Dallas Morning News last April and sadly I cannot find the creator.  Whoever you are, thank you times a million. 

The Goods:
  • 1 (12 oz pkg.) Lemon Cookies with Cream in the middle 
  • 6 oz Cream Cheese, softened
  • 1 tsp lemon extract
  • 1 ½ TBSP Powder Sugar
  • 12 oz White Chocolate Chips
  • Lemon Drops (optional but essential for me)
  • Sticks
In a food processor, process cookies until they are in fine crumbles.  Make sure you don’t over process.  I have a tiny food processor; therefore I have to do a couple rounds.  You could also use a blender if you do not own a food processor.



In your mixer combine crumbs with cream cheese, lemon extract, and powder sugar.   Mix until well combined.  It is very difficult during this stage not to eat a couple spoonfuls.  

Cover a baking sheet with wax paper.  Make sure your baking sheet will fit in the frig.  Roll the wonderful lemony mixture into balls.  I use a dough scooper and then roll in my hands.


Refrigerate for 1 hour.

 
Melt chocolate in microwave.  Be sure not to over cook! Trust me…it gets ugly. 

Dip ball in chocolate and then dip in crushed lemon drops. 


I have made these before and didn't have any issues...this time I did. 


I have read that if you dip the sticks in chocolate before you refrigerate they will stay better.  I will try that next time.  I tried covering the stick with chocolate and it worked okay...not great.


I love displaying these in jars with lemon drops in the bottom!
