Frozen Chocolate Coved Bananas

 Happy Sunday!  It has been a while since I have posted a healthy dessert.  I will tell y'all that this might be my favorite healthy dessert.  Ever.  Well, actually I think it is tied with {chocolate and peanut butter covered banana slices}.  I saw these Popsicles made on one of my favorite fashion blogs {See Jane}, and I figured they would be worth a shot!  Unfortunately, I skipped the part of adding oil to the chocolate so mine look a little funny because the chocolate wasn't very workable.  You will notice I started with 6 popsicles and only pictured 3 in the end... The others were eaten immediately because of their lack of beauty.  That was a tough decision.

Ingredients:

3 Bananas {cut in half}
1 Cup Chocolate Chips
1 TBSP Canola Oil
Peanuts, Pistachios, or Anything you want {optional}

Directions:

1.  Stick popsicle sticks in each banana half & freeze for an hour.

2.  Melt chocolate & oil in a double broiler or in the microwave.  Make sure you don't burn the chocolate!

3.  Dip the bananas in chocolate and use a spoon to get the chocolate all over!

4.  Sprinkle bananas with desired topping.

5.  Refrigerate for two hours before serving {my ugly ones didn't even make it back in the freezer and they were still divine}.

I hope you have a fabulous week!  My spring break countdown is TWO weeks.  I can't wait to have a little time off to recharge my brain!
