Lemon & Blueberry Pancakes


I made these for my Momma on Mothers Day! She deserved a wonderful breakfast!  Of course, I got the recipe from the fabulous Pioneer Woman.  She has not failed me yet! I got this cute heart pancake mold from World Market.  


The Goods
  • 1-½ cup Cake Flour
  • 1 Tablespoon (additional) Cake Flour
  • ¼ teaspoons Salt
  • 1 Tablespoon (heaping) Baking Powder
  • 3 Tablespoons Sugar
  • 1-½ cup Evaporated Milk (more If Needed)
  • 1 whole Lemon (maybe 2...depends on your lemon)
  •  Zest From 1 Lemon
  • 1 whole Large Egg
  • 1-½ teaspoon Vanilla
  • 2 Tablespoons Butter, Melted
  • 1 cup Heaping Blueberries

Heat heavy skillet to medium-low heat. 

In a medium bowl, mix flour, salt, baking powder, and sugar.


In a separate bowl, mix evaporated milk, juice of 1 lemon (add more if lemon isn’t very juicy), and lemon zest.  Allow to sit for five minutes, then mix in your egg, vanilla, and melted butter. 


Pour milk mixture into dry ingredients and stir gently.  Pioneer woman kept emphasizing that the mixture should not be too thick.  I didn't have that problem....Mine was the opposite.  I don't know what I was doing wrong.  :( I needed to add more flour to make the mixture thicker.  If your mixture does end up too thick then add a little more evaporated milk. 


Stir in blueberries. 


I greased my pan with pam but you could also use butter.


I would like to tell you that everything went fabulous and I had no problems during this last step...but I did.  I was making a terrible mess in my skillet!  Sorry for the picture being totally blurry but I was trying to move fast :)  I aspire to have pictures as beautiful as Pioneer Woman someday.

They were not all pretty (I did manage to make 2 presentable...), but they tasted WONDERFUL!  You could eat them with just butter or serve with warm syrup. YUM!
