Fruit Kabobs and Dip

I have always loved fruit salad but I decided to make fruit kabobs for Meghann’s baby shower!  Aren’t the pretty?  We wanted to keep with our football theme and made pennant toppers for them.  This post is the third one in my series...Wonderfully Made on a Stick :) 


This is Paula Dean’s Oh so fabulous fruit dip.  I can relate to her love for all things sugary… buttery… cream cheesy.
  
The Goods:
•    1 (8oz) cream cheese, softened
•    1 cup powder sugar
•    1 cup whipping cream
•    ¼ cup granulated sugar
•    1 lemon, zested and juiced
•    Pineapple juice to taste


Whip cream cheese with powder sugar until combined.


In another bowl (sure would be nice to have another Kitchen Aid bowl) whip together cream and sugar until soft peaks form.


Add cream cheese to the whipped cream mixture.  Add lemon zest and juice. 

I love this part…add pineapple juice to taste.   You HAVE to keep trying it until it tastes perfect! 

I love Paula’s idea to put the fruit dip in a hollowed out pineapple. 


I have a pretty funny story about this dip. I made it for a Taco office party and needless to say some people thought it was sour cream…oops.
