Fruit Cookie Pizza

Y'all ready for this?

I have to tell you this tastes better than it looks, and it looks pretty dang good...  My Tall Tan Man had a birthday on Friday and we celebrated a week early with my parents.  My Daddy {yes, I still call him Daddy} made a delicious tenderloin, my Momma made the fixins, and I of course volunteered for the dessert.  Tall Tan Man told me many years ago that he liked fruit pizza, and I am not sure why it took me so long to make it.  I found this recipe on Pinch of Yum and it definitely did not disappoint.

Fruit Pizza

Cookie Ingredients:
14 TBSP unsalted butter, room temperature
1 1/2 cups sugar
2 tsp vanilla extract
2 eggs
2 1/2 cups flour
1/2 tsp baking powder
1/2 tsp salt

Frosting Ingredients:

12 oz. {1.5 containers} cream cheese, room temperature
7 1/2 TBSP unsalted butter, room temperature
1 tsp vanilla extract
1-3/4 cups powder sugar
Fruit {kiwi, blueberries, black berries, strawberries}

Directions:

1.  Beat butter and sugar in a large bowl until light and fluffy.  Add vanilla and eggs and mix until combined.

2.  Add in flour, baking powder, and salt.  Mix until dough is combined, do not over mix.  Now go fold laundry, or watch an half an episode of Revenge while your dough chills for 30 minutes in the frig.

3.  Preheat oven to 350 and roll out your dough in to one big cookie.  If your feeling sweet then sprinkle 2 TBSP of extra sugar on top before baking.  It was a bit challenging for me to make a perfect circle, so my suggestions is to use a large dinner plate or platter as a cookie cutter.  As you can see I did not do this until after I baked it.

It was Tall Tan Man's idea, he's so smart.

4.  Bake for 17-25 minutes.  17 minutes will make your cookie more doughy and 25 minutes will make it all the way cooked.  Let cookie cool and pop it into the frig.

5. Mix all the frosting ingredients together and spread over your chilled cookie.  Add chopped fruit.

6.  Enjoy!

This has been my favorite dessert I have made in a loooong time.  It is not overly sweet so Tall Tan Man liked it, but sweet enough for me to have a second slice...  Hope y'all had a fabulous Monday!

Pre Wedding Photographs {the guys}!

I am currently sitting in a Starbucks in Denver, Colorado enjoying my first iced skinny cinnamon dolce of the year.  I'm definitely in my happy place.  :)  This post is perfect for today because it is Tall Tan Man's birthday!  I would tell you his age but I might get in serious trouble...it's a big one {milestone not number}.  Here are some of the pics of Tall Tan Man's hilarious friends by the wonderfully talented Caroline Jurgensen Photography!

All TTM's buddies from all phases of life!

The "Bleu pose"!  TTM's best man tore his Achilles and had to use crutches at the wedding.   They did not stop him from getting down at the reception!

And all the individual pictures...some of these are pretty funny :)

My handsome husband.

 I love this shot {and that dimple}.

I think they had fun...

Thank you Caroline for the beautiful pictures {I know it wasn't easy keeping the boys guys in line}!  Alright TTM and I are headed to Eastern Colorado for the evening {looks more like Kansas than Colorado to me}.  I might leave Colorado in a food coma.  Y'all have a great weekend!

Pre Wedding Photographs {the ladies}!

Well, I'm hot.  Literally. First sunburn of the year today, but I couldn't make myself go inside with the weather being so wonderful.  People usually associate Texas with being disgustingly hot, which it can be, but right now its perfect.  It makes me want to BBQ with Tall Tan Man and eat pies.  Speaking of Tall Tan Man {my HUSBAND, still not use to that} is coming to town this week.  So if you don't hear from me I am most likely burning dinner, and TTM is fanning the smoke detector.  I wish that was a joke.  Here are the pictures from before the wedding taken by the extremely talented Caroline Jurgensen.  If you are looking for a wedding, maternity, newborn, family photographer call her up!

Here is my fabulous friend/bridesmaid Stefanie doing my make up.

This precious baby girl was hanging out with us.

Thank you Stef, I loved my make up!

I wish I could wear my dress again...

I plan on changing the color of these shoes a couple times.  :)  I don't think I will ever get tired of bows.

Time to get the dress on!

I was regretting that panera cookie in the right picture. I told myself no carbs...

Then it was time for the buttons.  My Mom was a champ at this, we practiced.

Now time for my best friends!  If you notice we don't have bouquets...I didn't even realize we forgot them at the venue until they showed up where we were taking pictures.  :)

House and wedding party!

Love my house party!

My best friends!

Oh look we got our bouquets...haha

Thank you Caroline for the beautiful pictures!!!  I love them!  Hope y'all have a great week.  :)
