Fruit Cookie Pizza

Y'all ready for this?


I have to tell you this tastes better than it looks, and it looks pretty dang good...  My Tall Tan Man had a birthday on Friday and we celebrated a week early with my parents.  My Daddy {yes, I still call him Daddy} made a delicious tenderloin, my Momma made the fixins, and I of course volunteered for the dessert.  Tall Tan Man told me many years ago that he liked fruit pizza, and I am not sure why it took me so long to make it.  I found this recipe on Pinch of Yum and it definitely did not disappoint.  

Fruit Pizza

Cookie Ingredients:
14 TBSP unsalted butter, room temperature
1 1/2 cups sugar
2 tsp vanilla extract
2 eggs
2 1/2 cups flour
1/2 tsp baking powder
1/2 tsp salt

Frosting Ingredients:

12 oz. {1.5 containers} cream cheese, room temperature
7 1/2 TBSP unsalted butter, room temperature
1 tsp vanilla extract
1-3/4 cups powder sugar
Fruit {kiwi, blueberries, black berries, strawberries}

Directions:

1.  Beat butter and sugar in a large bowl until light and fluffy.  Add vanilla and eggs and mix until combined.  

2.  Add in flour, baking powder, and salt.  Mix until dough is combined, do not over mix.  Now go fold laundry, or watch an half an episode of Revenge while your dough chills for 30 minutes in the frig.

3.  Preheat oven to 350 and roll out your dough in to one big cookie.  If your feeling sweet then sprinkle 2 TBSP of extra sugar on top before baking.  It was a bit challenging for me to make a perfect circle, so my suggestions is to use a large dinner plate or platter as a cookie cutter.  As you can see I did not do this until after I baked it.  


It was Tall Tan Man's idea, he's so smart.  



4.  Bake for 17-25 minutes.  17 minutes will make your cookie more doughy and 25 minutes will make it all the way cooked.  Let cookie cool and pop it into the frig.

5. Mix all the frosting ingredients together and spread over your chilled cookie.  Add chopped fruit.

6.  Enjoy!


 This has been my favorite dessert I have made in a loooong time.  It is not overly sweet so Tall Tan Man liked it, but sweet enough for me to have a second slice...  Hope y'all had a fabulous Monday!
