It is the middle of the week and I need to do laundry, the dishes, vacuum, dust {it's been awhile} and grade papers but I am not...Just imagine the tune of the late Amy Winehouse "They tried to make me clean my apartment and I said no, no, NO." Instead I am blogging, crafting, and getting caught up on last nights episode of Hart of Dixie. I am a sucker for all the CW TV shows. Speaking of, am I the only one pumped for the Vampire Diaries season premier tomorrow?? I know this is not a normal obsession for someone that is 26, but I just can't help it. Love triangles, vampires, werewolves...what is not to love?
Today was one of my awesome administrators 40th birthday, and hope I look as good as her at age 27 as she does at 40. In honor of her special day I made her a Rice Krispie Bundt Cake. I thought it was pretty age appropriate. This is a simple, fast, and TASTY dessert! The combinations of Rice Krispies, candy corn, Reese's Pieces, and chocolate {if your mouth isn't watering then we can't be friends} it pretty phenomenal. I found this recipe on the blog {Eating Richly}. Alright, you will need...
Ingredients:
3 TBSP Butter
16 oz Marshmallows
6 cup rice krispies
1 cup Reese's Pieces
1 cup candy corn
1/2 cup semi sweet chocolate chips
Directions:
1. Melt butter in large pot over medium heat. Add marshmallows until they are completely melted. Remove from heat.
2. Add the Rice Krispies and stir until combine. Add Reese's Pieces and Candy Corn.
3. Grease bundt cake pan and spoon in mixture. This gets a little messy... If you put a little cooking spray on some wax paper it makes it easier to manipulate the mixture. Using the wax paper firmly press down mixture into pan.
4. Allow Rice Krispie Cake to cool completely before removing from the pan. Melt your chocolate in microwave safe bowl for 30 seconds {and 15 second increments after, if needed}, and drizzle over the top.
