Spring Cookie Cake

Who is excited it is Monday!?  I pretty sure my Monday would be more bearable if I had some of this cookie cake left over... but #noselfcontrol #thirdtrimester  Cookie Cake is one of my top 5 favorite desserts.  Tall Tan Man learned this on my last birthday when I asked him for one and he did not get it...  I occasionally like to remind him that I am still waiting on my cookie cake.  I'm thinking he is going to wait the 3 more months till my birthday now!   He's a smart guy and knows not to mess with a 38 week pregnant girl's birthday cake! #hormones 

Spring M&M Cookie Cake
Cookie Cake Ingredients:

10 TBSP Butter {room temperature}
2/3 Cup Brown Sugar
1/3 Cup White Sugar
1 Egg + 1 Egg Yolk
1 TSP Vanilla
1 2/3 Cup Flour
3/4 TSP Baking Soda
3/4 TSP Salt
1 Cup Easter M&Ms {plus extra for sprinkling}
Sprinkles {optional}
Frosting Ingredients:

1/4 Cup Butter {room temperature}
1/4 Cup Shortening
1/2 TSP Vanilla
2 Cups Powder Sugar
2 TBSP Milk


1.  Preheat the oven to 350 degrees, and grease an 8" spring form pan.

2. In a mixer, blend together the butter and sugar.  Add in the eggs and vanilla until it's all combined.

3.  Add the dry ingredients and mix until combined.  Using a firm spatula or wooden spoon, mix in the M&Ms. 

4.  Spread the batter into your spring form pan and bake for 23 - 28 minutes {easiest to use your hands!}.  I like my cookies very soft so I removed the cake at 25 minutes.  If the top of your cake is getting too brown cover with foil and continue baking.

5.  For the frosting: Mix butter and shortening together until combined.  Add vanilla and mix.  Slowly add in the powder sugar and milk until you get the desired consistency. 

One side note on the cookie cake...  The cookie was super gooey the first day I made it.  I wish I would of cooked it closer to 27 minutes, but the next day the cookie was perfect!  My icing technique is called controlled chaos...  A little less controlled and a little more chaos though.  :)  

I got the Easter M&Ms at Target and still have a bag of Peanut Butter ones in my pantry.  Duh Duh Duhnnn I know once I open those they will be GONE!  I am officially in my THIRD trimester this week and I can hardly believe it!  Nameless Baby Brother is moving a bunch and my belly is getting pretty massive.  I haven't been keeping y'all in the loop of the hecticness which is our life lately.  I promise I will fill y'all in when I decide to not nap when Mack is napping!  :)
